Alices's favorite recipe for the season:

Garlic Greens Pesto

"PESTO basically means "punded" in Italian and refers to the ancient method of making a paste by pounding and grinding the ingredients together with a mortar and pestle. Most folks may think of pesto as a rich mixture of basil, pine nuts, olive oil, garlic, and parmesan cheese.

__There are also other combinations of delicious ingredients that create equally satisfying results.
Here is a unique combination using one of springs first garden offerings - the young leaves of the garlic plant.

Combine thoroughly in a blender or food processor:

_4 cups chopped garlic greens
_1 cup olive oil
__2/3 cup parmesan cheese
_1-11/2 cups walnuts
__salt to taste if desired

The result is a delightfully green and tasty paste to be used on pasta or rice, in salad dressings, as a dip, or as a delicious spread on bread.
